Simple Tofu Scramble




Hello my good people!

I hope everyone enjoyed their sunday :) Today I am going to share one of my favorite breakfasts "Tofu Scramble" It's one of the first recipes I learned after becoming vegetarian. This is a simple version of the dish, but there are so many variations. It's a really versatile meal and you can have it anytime of the day. It works great as an egg substitute in scrambles. You can eat it in a wrap, or in a bowl. 

Ingredients:
Firm Tofu, 1/4 of the block
Mushrooms, 4/5 portabello's sliced
carrot, 1 med. chopped
Onion 1/8th of a med. onion diced
Mixed baby greens/or Spinach, Handful
Tomato, 1 small
Avocado, 1/2  
Salsa
Olive Oil, Salt, Pepper, Garlic Powder


First I cut about 1/4 cup of tofu from the block (this is for a single serving) and chopped into squares. Heat a pan with olive oil over medium/high heat and toss tofu into the pan. Lightly Season the tofu with a pinch of Salt and Pepper and a dust with Garlic Powder.  I like to brown the tofu up a bit before adding my other veggies. While that is cooking chop your other veggies. Set aside the tomato and avocado, because they will go on top of the scramble fresh. 

After your tofu has browned up a bit (about 5-7 min) toss in the other veggies. Reduce the temp a little bit and add another pinch of salt, pepper, and some more garlic powder if you would like. (Season to taste)

 Saute for a few minutes until you notice the mushrooms getting softer. Grab a handful of the mixed greens and cover the veggies. Let them Steam the greens for a minute. Turn the burner off and mix the greens into the veggies, and tofu with a Spatula or a large spoon. The goal is for them to warm and get softer but not cook all the way until they are wilted.  

When you are done put your scramble into a bowl, Add a large scoop of salsa and top with your fresh tomatoes and Avocado, Enjoy!

Its pretty simple and delicious. You can switch it up by adding different seasonings and veggies.  It's perfect for brunch or an early morning breakfast. 

Make sure you down a large glass of water before you put anything else into your body for the day. It will help get your metabolism going and also help you to not over eat.
